Quick and Easy Cheese Muffins

  • 1.5 cup plain flour (note: can use completely Lupin Flour if would like it to be gluten free)
  • 1.5 cups Lupin flour

  •  3 teaspoons Baking Powder

  •  6 cups grated cheese

  •  6 eggs

  • 300 – 600mls milk (can be substituted for coconut milk)

     

    Place all dry ingredients in bowl and slowly stir in the milk till mixture is wet but sticky.

    Using spray oil, grease a muffin tray

    Spoon mixture into muffin tray till level with tray top (as they rise well)

    Bake in warm oven (180-190 degrees) for 10-12 mins – until golden brown on top.
